The SCANCIO PROJECT

Mr. José Carlos Santanita, now general manager of Wine Senses in Sao Paulo - Brazil, is a highly respected professional in the world of wine and gastronomy, who conceived that the best way to honor the sommelier would be to create distinctive wines of high quality able to serve at any table and event with the SCANCIO name.

The Scancio project is "a tribute to the sommelier in the world"
José Carlos Santanita joined this project his partner Mr. Flavio Almeida, a lawyer and a recognized personality of Brazilian society. He invited then the renowned Portuguese winemaker José Neiva Correia who embraced the project and carefully selected the grapes for wines intended for project Scancio. Scancio Private Selection - Old Vines 2011; Scancio Reserva Tinto 2013 and Scancio Reserva white 2014.

Finally the image of the wines of this project was drawn up by one of the most respected wine art houses in Portugal: "Alice Quina - Atelier Wine".

Old Vines.

Vinification Method

Classic fermentation method with destemming and pre fermentative skin contact followed of the application of dry yeasts. Fermentation up to 30º C in the first 2/3, and lowering down to 20º C during the last 1/3. During the whole fermentative process, pumping over 2 times per day, using each time half of the volume contained in the vat. After the alcoholic fermentation, the cap is plunged for 30 days, and during that period, extraction of the gentle tannins is conducted, along with the malolactic fermentation and the natural stabilization of the wine.

Ageing

Wine is aged in new French of Allier oak barrels of the House Seguin Moreau of 225 litre for 18 months. Ageing in bottle a minimum of 12 months after bottling.

How to Serve

"Wine is undoubtedly a magical drink full of mysteries ... The wine as a living being born, lives and dies ... We must find the right time! Find the right company to the wine, harmonizes with the right music, because every moment is perfect. Make your worth from the souvenirs and drink a great wine ... "(José Santanita). Excellent with the “Pata Negra” ham, the Portuguese cheese “Queijo da Serra” and great complement of game meat and roasted red meats. Must be served at a temperature of 16 to 18ºC. Before serving should be carefully decant it because it is a wine with a minimum filtration to preserve as much of their quality, gaining much if breathing in decanter 15 minutes before serving.
