Ingredients
1 kg/21/4 lbs fresh mussels
2 glasses CORETO white
1 finely sliced carrot,
1 medium onion, sliced into half moons
2 garlic cloves
1 ripe tomato, thinly sliced
1 bay leaf
1 chilli pepper
3 bell peppers in strips
8 pepper corns
5 tbs olive oil
2 bunches parsley
Salt
Method
Place the onion, carrot, tomato, garlic, bay leaf, chilli pepper, bell pepper strips, olive oil and pepper corns in a pan and fry gently for about six minutes. Then, add the mussels, wine and parsley and stir together. Leave to simmer for five minutes. Correct the seasoning before serving.
