Serves 6

3 live lobsters, 1 kg/2.2 lbs each
120 g/4.2 oz butter,
2 dl/0.8 cup of olive oil
3 medium sized onions
3 garlic cloves
1 bay leaf
1 bunch of parsley
4 ripe tomatoes, peeled and seeded
1 glass
of DFJ Alvarinho & Chardonnay white
Salt and pepper

Chop the lobsters into pieces. Slice the onions, tomatoes and garlic cloves and add the salt, pepper, seasonings, butter and olive oil, fry and let sizzle for two to three minutes. Stir in the lobster pieces plus the juices released when cutting and the white wine. Boil over a low heat for twenty minutes to sweat the lobster thoroughly. Serve immediately with white rice.
